Ingredients for 4 persons:
- 1 pack of 500 grs. spaghetti
- 500 grs. minced beef meat or 250grs minced beef meat mixed with 250 grs minced pork meat
- 4 tbsps. tomato paste
- 1 small chopped onion
- 8 crushed garlic cloves
- 1 small glass of wine
- 1 teaspoon olive oil
- 3 tbsps. vegetable oil
- 1 teaspoon pesto
- 300 grs. shredded or grated parmesan cheese
- Basil, pepper, cinnamon, nutmeg, cloves, sage
- (1 medium chopped eggplant for a more gourmet taste)
Directions
Fill a medium pot with 3⁄4 of water and add olive oil and salt. When it boils, toss the spaghetti after breaking them in half. After 3 to 4 minutes turn off the heat. Put in a streamer and pour cold water. Put 2 tbsps. of vegetable oil in the pot then toss the spaghetti and season with salt. Stir for 5minutes and turn off the heat.
In a smaller pot, stir the minced meat in 1 tbsp. of vegetable oil until cooked; Add the onion then the garlic. Gradually season with basil, pepper, cinnamon, nutmeg, cloves and sage. Put the pesto, stir then pour the wine. After 3 minutes add tomato paste then 1/5 cup of water. Season with a bit of salt.
You can also mix the meat sauce and the spaghetti in a tray and put in the oven for 5 to 10 minutes for a crustier taste.
Drizzle some parmesan on the spaghetti when the meal is served.
For a more gourmet taste add 4 chopped pieces of 1 eggplant when you’re stirring the minced meat.
Wooow, i don’t usually like Bolognese particularly, but this recipe is something else, soooo tasteful
