- 1 kilo dry kidney beans or any other dry beans
- 2 or 3 garlic cloves
- 3 lemons
- 4 table spoons olive oil
- Fresh mint
Directions for 4 persons
Preparation time: 65 min.
Put the beans in a pot and cover with water. Water’s level needs to be 4 cm above the beans. When it starts boiling throw the water and replace by room temperature water in a pressure cooker.
Close the pressure cooker and put the alarm for 45 min. When done, put it under cold water then open it when the steam is off. Put again the pressure cooker on the fire and let it simmer for 15 minutes on low heat without closing the lid completely. Check the beans to make sure they are perfectly cooked.
Crush the garlic and put in a salad bowl. Add the pressed lemon, the olive oil and the salt. Mix all the ingredients and garnish with mint.
Tip: Water is thrown the first time to remove part of the beans’ gas.
